spinach & onion [paleo] egg muffins

I have wanted to post a recipe for {simple} egg muffins ever since I started making them last summer. I originally heard about paleo egg muffins through a past coworker who would always bring them to work as a snack or eat them before work outs. I loved the idea so I had to come up with my own recipe! I like to keep it as simple as I can because I always end up adding to them once they're cooked!

  • 12 muffins

  • 6 free-range eggs
  • 2 egg whites (1/4 cup)
  • 1/2 cup spinach, finely chopped
  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup nut milk
  • 1 tsp cayenne pepper
  • 1 tsp ginger marinade  
  • 1 tsp sea salt
  • 1 tsp garlic seasoning
  • black pepper to taste


  1. Preheat your oven to 350 and grease your 12 cup muffin tin with coconut oil.  In a large bowl whisk all of your eggs and egg whites together
  2. Very finely chop all of your ingredients and then toss them all into the same large bowl with the eggs as well as the seasonings
  3. Use a 1/4 measuring cup to pour the mixture into the muffin cups evenly
  4. Bake egg muffins for 21-23 minutes, or until they are cooked through the middle.
  5. Use a knife to gently loosen up the egg muffins by circling the edges

Bring your egg muffins to work for lunch, as a snack, as a pre workout pick me up, or even just an easy breakfast! I love to eat mine with fresh avocado slices and spicy salsa! xo
