Gingerbread Inspired Paleo Pancakes

The sight of snow on the ground AGAIN makes me want to cringe… I wish I could lock myself in my room for a few days and hibernate underneath the sheets! Instead, I chose to be productive (kind of) and make something extra delicious for myself. Gingerbread, cinnamon, and spice are some of my most favourite flavours. Add some coconut to that equation and there you have my perfect comfort food! These gingerbread inspired pancakes are super easy to make and delicious, of course!

Serving:

5 pancakes

Ingredients:

  • 2 free range eggs
  • 1 ripe banana (for sweetness)
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon nutmeg
  • 2 teaspoon flax seed

               Additional but not necessary: molasses, dark brown sugar, unsalted butter 

Method:

  1. Place a non stick pan on med-high heat, add a teaspoon of coconut oil and allow it to melt on the pan
  2. Mix your ingredients in a medium sized bowl using a whisk or fork 
  3. After mixing, use a spoon to scoop up the mixture and create a medium sized circle on the skillet with about 1/4 of the pancake batter. (you may need to add more coconut oil onto the skillet for the next pancake to avoid sticking)
  4. After one-two minutes check on the pancake (lift up one side) and if it has become a golden brown colour then flip it to the opposite side and cook for an additional one-two minutes. (Little bubbles may appear on the top of the pancake when it is ready to be flipped over)
  5. Repeat step # 3 four more times (or until you have run out of batter)
  6. Transfer pancakes onto a warm plate and top them with anything of your choice! I topped mine with crispy coconut thins, maple flakes, and local organic honey!
