Healthy + Gluten Free Vanilla Protein Pancakes

    As I head into my fourth weekend of yoga teacher training, I know that I must fuel my body with a delicious and nutritious breakfast to keep me going strong today! This pancake recipe usually keeps my body feeling full- at least until lunch time! It takes a lot of brain and will power for me to be able to sit still for hours on end… Personally for me, the feeling of being full and knowing that I have eaten a decent sized breakfast definitely seems to help! Oh, and coffee helps.. Always coffee :|

Yields:

  • 4 large pancakes

Ingredients:

  • 2 medium free range eggs
  • 2 tbsp flax seed, ground
  • 1 tbsp cinnamon, ground
  • 1 banana, mashed
  • 1/4 cup vanilla protein powder (I suggest plant-based)
  • 1 tbsp vanilla extract
  • Coconut oil for cooking
  • Organic almond butter for drizzling 

Optional: Stevia, Dates, Maple extract, Organic honey, Maple syrup 

Method:

  1. Place a non stick pan on med-high heat and then add coconut oil and allow it to melt 
  2. Mix ingredients in a medium sized bowl using a whisk or fork
  3. Use a spoon to scoop up the mixture- create a medium sized circle on the skillet with about 1/4 of the pancake batter. (you may need to add more coconut oil onto the skillet for the next pancake)
  4. After one-two minutes check on the pancake and if it has become a golden brown colour then flip it to the opposite side and cook for an additional one-two minutes. (Little bubbles may appear on the top of the pancake with it is ready to be flipped over)
  5. Repeat step # 3 four times, (or until you have run out of batter)
  6. Transfer pancakes onto a warm plate and top them with almond butter, honey, maple syrup, or fresh fruit!
  7. ENJOY!
