Paleo Challenge- Week 1

With week one of my Paleo challenge coming to a close I thought I could update you on how the process is going for me so far. Considering that I eat a pretty clean diet already, I assumed this challenge would be nothing but easy for me… But, what I discovered is that when I actually put restrictions on my diet everything becomes much more difficult! What I found most difficult this week was trying to have my meals organized enough time in advance so that I could just grab them and go- no matter where I was headed. For a number of different reasons this just was not happening for me this week. I stayed on track for the most part, but I also fell off the wagon a few times… (i.e the timbits got me.. and the new pretzel bagel….yikes) But it’s all about forward momentum, right?

  Overall I am happy with my first week of the Paleo challenge and hope to do even better this week.

Here are some of my meals that I had during my first week of the challenge:

Breakfast

  • Scrambled eggs with salsa & avocado
  • Homemade banana pancakes {egg, cinnamon, banana, flax)
  • Dairy-free yogurt parfait with berries {coconut yogurt}
  • Creamy green smoothie {banana, spinach, kale, cinnamon, almond butter, vegan protein powder, almond milk, dates}
  • Chia seed pudding {chia, cocoa powder, banana, agave, almond milk}

Lunch

  • Omelet with mixed veggies
  • Green juice{lime, ginger, cucumber, celery, spinach, banana}
  • Green smoothie
  • Hard boiled eggs with peppers, broccoli, and carrots
  • Homemade carrot sweet potato soup

Dinner

  • Ground turkey taco salad
  • Spaghetti squash
  • Turkey chili
  • Chicken with vegetables

Snack

  • Granny smith apple with cinnamon and almond butter
  • Handful of mixed nuts with a few dates
  • Salted seaweed (it’s actually good!)
  • Homemade bliss balls
  • Raw vegetables and avocado or hummus dip
  • Fresh fruit
  • Dates stuffed with almond butter
