Sweet Monday treat...

After a long, hectic, and AMAZING action packed weekend, I felt little pick-me-up sweet treat was necessary for the week ahead!

Flax Seed + Buckwheat Bliss Balls

Ingredients:

  • 1.5 Cups flax seed meal
  • 1/2 Cup buckwheat
  • 1/2 Cup raw sunflower seeds
  • 1 Cup pitted-dates (about 15)
  • 1 tablespoon stevia
  • 3 tablespoons bee pollen
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons coconut oil
  • 4 tablespoons raw pumpkin butter
  • 4 tablespoons natural agave nectar

Method: 

Add all of the above ingredients into your vitamix or food processor. Pulse the ingredients until the mixture becomes a thick and moist consistency. Line a baking sheet or plate with wax paper and/or coconut oil to avoid the mix sticking. Next, rub some coconut oil on the palms of your hands to avoid the mixture sticking to your skin. Using a tablespoon, pick up the mixture and begin to form small ball shapes by rolling them in the palm of your hands.

Store your bliss/energy balls in the refrigerator or freezer. Once they set, take them out and enjoy!

**This recipe makes 26 small balls**

I love throwing my bliss balls in my lunch at work or having one right before my yoga practice for a little burst of energy!!
