So often I focus my Valentine's day on "the other". This year has been much different for me as it is my first Valentine's Day without a boyfriend since I was much younger and I must admit- it felt pretty odd for me! I totally treated myself today in order to keep my mind completely off of this holiday in general. I went for a massage, cooked, shopped, etc. And when I was feeling down I was gently reminded by a dear friend that Valentine's Day is not only about making someone else happy, but it is also about making yourself feel happy, loved, and appreciated. #selflove So in light of this, you should make some delicious goodies, get cozy, treat yourself, and crack open the bottle of vino my friend because today is also about you.
Pumpkin Coconut Bliss Balls
- 1.5 cups flax meal
- 15 pitted dates
- 1 cup organic pumpkin puree
- 1/4 cup raw pumpkin seeds
- 1/3 cups shredded coconut (unsweetened)
- 1/4 cups whole flax seeds
- 2 tbs organic pure maple syrup
- 1 tbs coconut oil
- 1 tbs coconut butter
- 1 tbs stevia
Add above ingredients into your vitamix and pulse for approximately 1 minute or until the mixture is a thick and sticky consistency. Cut a slice of wax paper and place it on a separate plate or baking sheet. Next, lightly grease your hands with some coconut oil and start rolling! Using a tablespoon, pick up the mixture and roll ball shapes in between the palm of your hands. Once you have rolled all of your bliss balls, store them in the refrigerator and/or freezer for anywhere between 2-5 hours prior to eating! (I like to store my bliss balls in mason jars) Take them out and enjoy!!
