This morning i made some delicious (and nutritious) coconut banana pancakes!
- 1 large banana
- 2 medium eggs
- 1 tbs ground cinnamon
- 1 tbs unsweetened coconut shreds
- 1 tsp vanilla extract
optional: agave nectar, almond butter, fresh fruit
Start by peeling you banana and mashing it into a bowl. Next add your ground cinnamon, and coconut shred, followed by your eggs, and vanilla extract. Use a fork or hand mixer and whisk the mixture till the banana is fully mashed. Lightly line your non-stick pan with coconut oil and pour your pancake mix onto the pan. Let the pancake cook on medium heat and then flip after a few minutes (once the one side is fully cooked) When the pancakes are complete you may top with additional coconut shred, agave, almond butter, or fresh fruit!
*This recipe will make three small pancakes
